Happy Fall!


Happy 1st day of Fall! Although it's a bit warmer than normal, I thought I would post a cupcake recipe that reflected the flavor of fall, Pumpkin Cupcakes with Maple frosting. They smell and taste just like fall. I love these cupcakes because they are super moist and have a flavor combination that just tastes perfect together. Enjoy :o)

Pumpkin Cupcakes with Maple Frosting

1 cup all-purpose flour

1 tsp. baking powder

½ tsp. baking soda

1 tsp. ground cinnamon

½ tsp. ground ginger

½ tsp. ground nutmeg

2 eggs

1 cup canned pumpkin (not the flavored pie filling)

½ cup sugar

½ cup brown sugar

½ vegetable oil

1.) Preheat oven to 350°. Line 12 muffin cups with paper baking cups.

2.) In a medium bowl, combine flour, baking powder, baking soda, cinnamon, and nutmeg. In another large bowl, whisk together eggs, pumpkin, sugars, and oil. Add flour mixture and stir until combined.

3.) Divide batter evenly among liners and bake 20 minutes, or until a toothpick inserted comes out clean. Let cool.

Meanwhile, make:

Maple Frosting

6 oz. cream cheese

3 Tbsp. butter, softened

¼ tsp. maple flavoring

½ tsp. vanilla

3 cups powdered sugar

chopped Heath candy bars

1.) In a bowl, beat cream cheese and butter together. Add maple and vanilla. Beat in powdered sugar.

2.) Spread over cupcakes and top with chopped heath candy bars.
