Strawberry Orange White Chocolate Cake




Here is my latest creation! Something fresh and light that reminds me of Spring in the middle of Winter! How I long for warmer days..

Strawberry Orange White Chocolate Cake

White Chocolate Cake

1 cup whole milk

½ cup butter

8 oz. white chocolate chips

2 cups all purpose flour

2 tsp. baking powder

½ tsp. salt

4 eggs

1 ¾ cups sugar

1 tsp. vanilla extract

2 tsp. orange zest (optional)

1.) Preheat oven to 350°. Grease 2 9 in. pans.

2.) In a medium saucepan: heat milk, butter, and white chocolate on low heat. Stir constantly until everything is melted and smooth. Set aside.

3.) Sift together: flour, baking powder, and salt into a medium bowl and set aside.

4.) In a large bowl: beat eggs and sugar with electric mixer until they are a light cream color. Mix in vanilla and orange zest. On low speed, slowly add flour mixture and milk mixture until batter is smooth.

5.) Divide batter evenly among pans and bake for 30-35 min.

For filling and frosting:

2 cups strawberries, chopped

2 Tsp sugar

8 oz. white chocolate, chopped

¼ cup powdered sugar

1 tsp. orange zest

1 large container cool whip

1.) For filling: Combine strawberries, orange zest, and sugar with about 2 cups of cool whip. Place in between 2 cake layers.

2.) For frosting: melt white chocolate chips and beat into cool whip.

Frost cake.
